Green Banana Salad

This salad is a twist on classic potato salad by substituting the potato with a complex carbohydrate , green banana. I will say my mom did this with boiled breadfruit as well as it was delicious but so filling. In Trinidad, one of my favourite lunch hunts was IrieBites Jerk Center and Grill, which made a wonderful green banana salad with a side of Jerk Lamb. OH, perfection! I am 2,281 miles from home so to get my fix I have to make it. As soon as I tasted this salad, I was reminded of how much I loved it. Creamy carb goodness that pairs perfectly with anything grilled that I can tell myself is healthier, lol.

As always, feel free to adjust this recipe to suit your taste e.g. add garlic, parsley, mustard, etc. Make it your own , flavoured the way you like to eat.

 Tips:

  • Boil green bananas by placing them in cold water.

  • The bananas will release a grey foamy scum which is totally normal.

  • The bananas will lose their green colour for a discoloured brownish yellow.

  • Tinned peas and carrots can be used in the salad.

 

 Ingredients:

6 green bananas

1/2 cup green peas

1/2 cup carrots cut into 1/2 inch circles

1/4 cup corn

1 green onion stalk minced

1/2 tsp salt

1/2 tsp black pepper

2 Tbs mayonnaise

 Preparation:

  1. Place carrots in another pot with boiling salted and cook for 10 mins until lightly soft.

  2. Add peas and corn and boil for 5-8 minutes .

  3. Strain and put aside until assembling the salad.

  4. Trim the ends of the bananas, place in a pot of cold water and boil for 25 minutes until the bananas lose their colour and a knife pierces the skin easily.

  5. Strain boiled green bananas, remove the skins and cut into 1/4 inch pieces.

  6. Add carrots, corn, green peas , green onion,  salt, black pepper to the cut bananas and stir to incorporate.

  7. Add mayonnaise and toss to ensure the everything is coated properly.
