Baked potatoes

This recipe is really my mom's and I am sharing it because it is tasty, crispy and delicious. It is a different take on roasted potatoes flavored with Trinidadian seasonings. This dish makes an appearance at a lot of special occasions and is an unexpected hit.

It starts off with potatoes par-boiled for 15 minutes and then flavored with ketchup, seasonings and coated with flour, fried and topped off with grated cheese. I prefer roasting the potatoes and added a little corn starch with the flour to help crisp the potatoes.

This is a great side dish, as the potatoes develop a crispy exterior but remain soft on the inside . The ketchup and seasonings create a flavorful lightly sweet and savory flavor reminiscent of barbecue . This dish can be made vegan by substituting vegan cheese or omitting and can be served with vegetables, proteins and salad.

 Ingredients:

4 large potatoes cut into 2 inch pieces.

1 tablespoon grated garlic

1 tablespoon parsley / shadow beni

1 teaspoon of pimento peppers

2 tablespoons ketchup

11/2 tablespoons flour (all purpose)

1/2 tablespoon corn starch

1 tablespoon finely grated cheddar cheese (optional)

2 teaspoons salt

1 teaspoon black pepper

 Preparation:

  1. Place potato pieces in a large pot and cover with room temperature water and 1 teaspoon salt. Bring to a boil until the potatoes are partially cooked. (About 15 minutes ).

  2. Drain potatoes and season with salt, black pepper, pimento, parsley and ketchup. Toss potatoes to ensure all pieces are coated with seasonings.

  3. Add flour and cornstarch to the seasoned potatoes and coat evenly.

  4. Pre-heat oven to 380F , prepare a baking dish by spraying with cooking spray or evenly coating with vegetable oil.

  5. Layer potato mixture into the baking tray ensuring and potato pieces are in one layer and spaced adequately.

  6. Place in the oven and bake for 40 minutes, remove and top with grated cheese (optional) and bake for 15 minutes.

  7. Remove from the oven and enjoy.
