French Fry Hash

Left over French fries repurposed into an anytime dish!

French fries golden delicious salty goodness but after a few hours much less a day in the fridge CARDBOARD. My kiddo is a _chicken nugget girl_ but it often means leftover fries. In my drive to reduce food wastage I tried repurposing left over fries as breakfast hash.

I cut up the fries and add a mixture of fresh vegetables, herbs/ seasonings and breakfast meat . Believe me when I say it is a lovely mix of fresh, filling, and somewhat fancy . I will say this is a very flexible dish and you can substitute whatever you have on hand to revamp your former fries.

My general formula is : **Veggies** for moisture and flavour +**Herbs** for freshness + **Protein** for added fat and flavour = **_Delicious Hash_**

  • Fresh Vegetables - Bell Pepper (Sweet Pepper in Trinidad ) , onions, mushrooms, tinned corn, finely diced apple .
  • Herbs / Seasonings - Green Onion (Chive in Trinidad), thyme, fennel, dill, parsley
  • Breakfast meat - Bacon, Sausage , left over rotisserie or even chicken nuggets.

**Serving Suggestion:**

  • **Serve with a side of Avocado and grilled tomato.**
  • **Top with an egg sunny side or poached.**

Ingredients

  • 1 tablespoon vegetable oil
  • 1 1/2 cups cubed French fries or substitute 2 hash brown patties
  • 1 sausage link - sliced
  • 1/4 white onion cubed
  • 1/2 large bell pepper cubed
  • 2 white button mushrooms sliced (optional)
  • 1 Jalapeno pepper sliced (optional)
  • 1/4 cup of parmesan cheese finely grated (any cheese )
  • 2 tablespoons BBQ sauce / ketchup
  • 2 tablespoons of green herbs ( Cilantro / parsley / green onion)

Preparation

  1. Step 1: Pre heat pan with vegetable oil on medium heat and add onions. Sautee for 1 minute until the onions are translucent .
  2. Step 2: Add sausage and mushrooms . Cook for 3 minutes until the mushrooms are soft and release liquid and the sausage releases some oil .
  3. Step 3: Add bell pepper and cubed French fries and cook for 5-8 minutes. At this time the fries and the all vegetables should be soft but not mushy.
  4. Step 4: Add in sliced jalapeno and BBQ sauce turning until the sauce is incorporated into the hash.
  5. Step 5: Top hash with Parmesan cheese and herbs and stir for 1 minute . The cheese should have melted and the herbs incorporated throughout the hash.
