Jerk Minced Pork Kebab on Pineapple Skewer

This recipe was born out of me not wanting to waste the pineapple core when I purchase and peel my own pineapple in addition to remembering sugar cane skewers in Vietnamese restaurants. In my head I thought maybe the pineapple core could act as a skewer? So I tested it and I loved the results, the kebabs got a slightly sweet pineapple flavour while the minced kebab meat held on the skewer well enough to be grilled on my flat top.  These kebabs are reminiscent to gyro meat in terms of the texture and flavour. Smoky, spicy and lightly charred with a slightly sweet pineapple undertone. I served these with escovitch pickles on oatmeal tortillas. The sweet and spicy pickle were a fantastic counterpoint to the fatty charred minced pork kebab.

 You can certainly do these kebabs using regular skewers or even freeform without a holder. Feel free to substitute minced chicken, turkey or even seafood.

 Tips:

  • 1 pineapple core can be split into 4 pieces and frozen until ready for use.

  • Chill the kebabs before grilling to help prevent breaking.

  • Ensure the kebab meat is fairly even in thickness.

  • If grilling on grates oil properly to prevent sticking. Don't turn frequently to prevent breakage.

Ingredients:

1 Pineapple Core

1 lb minced pork

4 cloves Garlic

12 allspice berries

2 habanero

1 stalk green onion

1 teaspoon soy sauce

1 teaspoon browning

1 teaspoon brown sugar

1/2 inch ginger

1 teaspoon salt

 Preparation:

  1. Cut Pineapple core into 4 stalks approximately 1/2 inch thick and 2-3 inches long. Freeze or refrigerate until ready to use.

  2. Make jerk marinade , place all ingredients into a mortar and pestle and pound until a thick paste appears.

  3. Mix seasoning into the minced meat and refrigerate for an hour or overnight.

  4. Portion the meat into 4 .

  5. Place one portion of meat onto the pineapple skewer ensuring it is firmly attached to the skewer and not too thick.

  6. Grill on the flat top on medium high heat  20-25 minutes ensuring the meat is fully cooked.

  7. Enjoy.
