Cucumber Yogurt Salad

Cucumbers and shallots tossed in yogurt dressing

Cucumbers are generally used as additions to most meals, however, this salad can honestly stand solo with a side of grilled, baked or barbecued protein. This cucumber recipe was really developed to be paired with lamb kebabs, honestly though it is a nice change up that will make it into the regular meal rotation. My little villager approved of it so give it a try, you may like it !

 Ingredients:

2 cucumbers

1/2 shallot / red onion

1 teaspoon of salt

1/2 teaspoon of white sugar

 Yogurt dressing

  • 1/2 cup yogurt

  • 2 tablespoons of sour cream

  • 1 garlic clove grated

  • 1/2 tablespoon of lemon juice

  • 1 sprig of dill (optional )

  • 1 sprig mint finely minced

  • 1/4 teaspoon salt

  • 1/4 teaspoon of black pepper

 Preparation:

  1. Prepare the cucumbers by removing the ends,  cutting in half length wise and using a spoon to remove the seeds in the middle. 

  2. Cut the cucumber across into 1/4 inch pieces creating a half moon shape.

  3. Finely slice the shallot lengthwise .

  4. Place the cucumbers and shallot into a bowl and add the salt and sugar. Toss to fully incorporate and set aside for 60 minutes (1 hour).

  5. Prepare the dressing by mixing all ingredients except the salt together in a bowl. 

  6. Remove the excess moisture from the cucumbers and shallot by squeezing or pressing them together.

  7. Toss the cucumber mixture together with the dressing ensuring everything is fully coated in the dressing.

  8. Taste and add salt to your preference.
